Delia's pancakes

Delia's pancakes

Ingredients
For the pancake mixture:
110g/4oz plain flour, sifted
pinch of salt
2 eggs
200ml/7fl oz milk mixed with 75ml/3fl oz water
50g/2oz butter
To serve:
caster sugar
lemon juice
lemon wedges

Method
Sift the flour and salt into a large mixing bowl with a sieve held high above the bowl so the flour gets a airing. Now make a well in the centre of the flour and break the eggs into it. Then begin whisking the eggs - any sort of whisk or even a fork will do - incorporating any bits of flour from around the edge of the bowl as you do so.

Next gradually add small quantities of the milk and water mixture, still whisking (don't worry about any lumps as they will eventually disappear as you whisk). When all the liquid has been added, use a rubber spatula to scrape any elusive bits of flour from around the edge into the centre, then whisk once more until the batter is smooth, with the consistency of thin cream. Now melt the 50g/2oz of butter in a pan. Spoon 2 tbsp of it into the batter and whisk it in, then pour the rest into a bowl anduse it to lubricate the pan, using a wodge of kitchen paper to smear it round before you make each pancake.

Now get the pan really hot, then turn the heat down to medium and, to start with, do a test pancake to see if you're using the correct amount of batter. I find 2 tbsp is about right for an 18cm/7in pan. It's also helpful if you spoon the batter into a ladle so it can be poured into the hot pan in one go. As soon as the batter hits the hot pan, tip it around from side to side to get the base evenly coated with batter. It should take only half a minute or so to cook; you can lift the edge with a palette knife to see if it's tinged gold as it should be. Flip the pancake over with a pan slice or palette knife - the other side will need a few seconds only - then simply slide it out of the pan onto a plate.
Stack the pancakes as you make them between sheets of greaseproof paper on a plate fitted over simmering water, to keep them warm while you make the rest.

To serve, spinkle each pancake with freshly squeezed lemon juice and caster sugar, fold in half, then in half again to form triangles, or else simply roll them up. Serve sprinkled with a little more sugar and lemon juice and extra sections of lemon.

Happy Chinese New Year

Happy Chinese New Year to everyone. This year is the year of the pig and it's a golden pig which only occurs once every six decades:

Delicious

Kay with a look at managing bookmarks. If you are like me, you
probably your favorite websites bookmarked in the offic and at
home. Have you forgotten a site which you saved at the office
but needed to access at home?

Storing your bookmarks on your local hard drive is nice,
especially when you don't have an internet connection, but what
if you want to access your bookmarks from school or work, when
you're away from your home PC? What happens when you've a
massive bookmark collection and want to search for one bookmark
amongst the multitudes? And don't forget to backup your
bookmarks when you migrate from XP to Vista! Isn't there an
easier way? Yes, read further!

Enter Del.icio.us!

The solution is to store all of your bookmarks on the web. This
method of bookmark storage has numerous advantages. For one,
you can access your bookmarks from any computer that has a web
connection and browser; you no longer need to email bookmark
links to yourself when you want to view them at school or work!

Another great plus that's intrinsic with web-based bookmark
storage is that you don't need to worry about backing up your
bookmarks when you upgrade operating systems, switch browsers,
perform a clean install or whatever. All your bookmarks are
all safely residing on some web server somewhere, completely
separate from your home computer.

del.icio.us: Social Bookmarking

The oddly named web-based bookmark site, del.icio.us, is a great
choice for storing all your bookmarks on the web. Delicious
describes itself as a "social bookmarking site"; basically,
this means that when you create an account and start building
up a bookmark collection, you've the option to make your
bookmarks private or public. When you designate a bookmark as
"public", the public can see it; users can see your public
bookmarks, and you can see theirs. Essentially, this social
bookmarking method is a great way to find obscure websites that
you probably would not have found by yourself.

Delicious: The Nitty Gritty of It

Simply put, once you create a Delicious account, you can start
saving bookmarks. Delicious employs an intelligent way of
labeling your bookmarks called "tags". When you save a new
bookmark, Delicious lets you give it various tags, which can be
any number of words separated by spaces. By giving your
bookmarks "tags", it makes searching for a specific bookmark
easier; this is especially true when you've accumulated a
copious amount of them.

If you use Firefox or Internet Explorer to browse the web,
you'll want to install the Delicious extension that'll make
saving your bookmarks a cakewalk. After you've installed said
plug-in, you'll see two new icons in Firefox or Internet
Explorer toolbar. The first button will zip you on over to your
Delicious account's homepage, and the second button, called the
Tag Button, will allow you to tag and save the current page
you're viewing as a bookmark.

After you've given the bookmark an appropriate title and tags,
the extension will automatically push your new bookmark to your
Delicious account--all in one fell swoop!

Where's that pesky Bookmark!?

Delicious makes searching for a specific bookmark incredibly
simple with its tagging system. Because you can append
multiple "tags" to a given bookmark, you can easily search for
a bookmark if you know what you're generally looking for.
Being a programmer, I've a tendency to save a lot of
programming pages as bookmarks. When I save a bookmark that
pertains to programming, I give it an appropriate tag so I can
easily find it again should I need it quickly.

For example, if the web page I'm on has to do with Python--a
popular programming language--I'll give it a "python" tag, or if
the page talks about Perl--another popular coding language--I
will designate it so via a "perl" tag. Now when I want to view
all my "Python" bookmarks, I can tell Delicious to just display
all my Python bookmarks. This is a very powerful way to
organize your bookmarks for quick retrieval.

Delicious is an excellent way to store your bookmarks on a
website. Doing so will give you "global" access to your
bookmarks whether you're at work, school or across the world;
you're no longer shackled to your home PC to get at your
bookmarks! Surf on over to de.icio.us, create your very own
account and start amassing your web-based bookmark collection!
